COCHINO TACO ENGLEWOOD

The Cochino Taco Englewood project began with an unexpected setting: a vacant mid century gas station turned mini mart, located on a busy intersection near the owner’s home. Backed by his own tequila label and a passion for mezcal, the restaurateur partnered with Shike Design, a Denver restaurant designer, to reimagine the space into a vibrant taco and tequila destination.

The design combines the gas station’s mid century structure with an eclectic mix of reclaimed materials and found objects. Old barstools, hand glazed tile, plow wheels, billboards, pipe shipping brackets, industrial lights, and even operating room lights were integrated into the design. Restroom mirrors were crafted from pickup truck grills, adding playful originality.

A new bar, replicated in mahogany plywood after plans to salvage a historic piece fell through, anchors the space. Together, these elements create a colorful, layered environment that reflects the brand’s energy and story.
